When I think of this recipe, I think of a rainy day in India, sitting on the front porch, listening to music and enjoying the rain drops dripping from the roof… Yes this is a super easy recipe that you can enjoy as an evening snack, as a healthy breakfast to have with family on a Sunday morning or a quick lunchbox recipe for the kids. It’s a recipe that is not super heavy but keeps you full for hours.

Poha (Spiced Flattened rice)

      Ingredients

      For Flavor Infusion (Tempering/ Tadka)

      • 1 Tablespoon Ghee or Oil
      • 1 Teaspoon Mustard seeds
      • 1 Tablespoon Channa dal
      • 1/4 Teaspoon Asafetida
      • 3 Slit or Chopped finely Green Chillies
      • 6 to 8 Curry leaves

      Ingredients

      • 1 Cup Poha
      • 1 Chopped Red onion
      • 1 Chopped Potato (Medium)
      • 1/2 Teaspoon Turmeric Powder
      • Salt To Taste
      • 2 to 3 Tablespoons Salted Peanuts
      • 1/4 Cup Water

      For Garnish

      • Juice of 2 key limes
      • A handfull of chopped cilantro

      Method

      • 1)

        Wash the Poha (flattened rice) strain the water and keep aside in a bowl

      • 2)

        Take a cooking vessel and add the flavor infusion (tempering) ingredients

      • 3)

        When the mustard seeds splutters, add the peanuts and saute for a minute until its brown

      • 4)

        Add chopped onion and saute until it is transparent

      • 5)

        Add the potato, turmeric powder, salt and water

      • 6)

        Mix nicely and keep the stove on low flame (sim), cover and cook for about 5 minutes until the potato is al dente

      • 7)

        Add the Poha and mix until all the flavors are combined

      • 8)

        Garnish with lime juice and cilantro

      • 9)

        Enjoy when its hot

      Notes

      Option: You can add peas and carrots if you like vegetables
