A super duper South Indian delicacy – Masala Dosa. You will never find a Tamil Brahmin house without dosa batter… I love Dosa and can eat it for breakfast, lunch, snack and dinner everyday… yes EVERYDAY. The first thing I packed when I got married and was moving to the US was my wet grinder. I cannot live without Dosa and so will you if you try out my fool proof dosa and masala recipe. Enjoy.

Masala for Masala Dosa

      Ingredients

      For Flavor Infusion (Tempering/Tadka)

      • 2 Tablespoons Oil
      • 1 Teaspoon Mustard seeds
      • 1 Tablespoon Channa dal
      • 2 Slit Green chillies
      • 1/4 Teaspoon Asafetida
      • 6 to 8 Curry leaves

      Ingredients

      • 4 Peeled and roughly chopped Potatoes (Medium)
      • 1 Chopped Red Onion (Medium)
      • 1/4 Teaspoon Turmeric powder
      • 1 1/4 Cups Water
      • Salt to taste

      For Garnish

      • A handfull of chopped cilantro

      Method

      Cooking the potato

      • 1)

        Boil 5 cups of water

      • 2)

        Add the potatoes and boil for 8 minutes until its cooked well

      • 3)

        Drain the potatoes and keep aside

      Preparing the Masala

      • 1)

        In a cooking vessel, add the tempering ingredients

      • 2)

        When the mustard seeds splutter, add the onion and turmeric powder

      • 3)

        Saute until its transparent

      • 4)

        Add 1 1/4 cup water and salt and mix nicely

      • 5)

        Taste the water to make sure the salt is right

      • 6)

        When the water boils, add the the cooked potatoes and mash it slightly

      • 7)

        Mix until it is semi solid

      • 8)

        Switch off the flame and garnish with cilantro

      • 9)

        Enjoy with hot dosa

      Notes

      You have to prepare the dosa batter in advance.
