A rustic family favorite. Easy, healthy, tasty.
Ingredients
- 2 Tablespoons Cooking Oil
- 1 Big Red Onion, Chopped
- 3 Corn Tortillas, Cut into thin strips
- 7 Cloves Garlic
- 14 Oz Can Black Beans
- 14 Oz Can Corn, Not Sweet Corn
- 28 Oz Can Crushed Tomatos
- 1 Red Bell Pepper, Chopped and ground to a paste
- 1 Carrot, Chopped and ground to a paste
- 1 Orange Bell Pepper, Finely chopped
- 2 1/2 Cups Water
- 2 Tablespoons Cumin Powder
- 1 Tablespoon Red Chilli Powder
- Salt to taste
- 1/4 Cup Mexican Blend Cheese
Garnish
- Finely Chopped Cilantro
- Tortilla Chips (Optional)
Method

In a heavy-bottomed vessel, add oil. When the oil is hot, add garlic and sauté until garlic is browned. Then add the onions and sauté until it becomes translucent.

Now add the tortilla strips and sauté for 2 minutes.

Add the other ingredients (beans, corn, tomato, bell peppers, water, cumin and red chilli powder, salt), cover and let it boil in medium flame for about 35 minutes.

Once the soup is cooked, serve and garnish with cilantro, cheese and some tortilla chips.
Tip
You can make this with or without chicken. If you are adding chicken, use the shredded chicken that comes in a can and add it along with all the other ingredients.
You could also add all ingredients in a slow cooker and set it for 4 hours.
