Khichidi (Rice and Lentil Porridge)

Ingredients
For Tempering (Tadka)
- 3 Tablespoons Ghee
- 1 Tablespoon Cumin seeds
- 1 Bay leaf
- 2 Slit Green Chillies
- 6 to 8 Curry leaves
- 1/4 Teaspoon Asafetida
For Instant pot
- 1 Cup White rice
- 1 Cup Moong Dhal (Yellow Lentils)
- 4 1/2 Cups Water
- Salt To Taste
- 1/4 Teaspoon Turmeric powder
For Garnish
- A handfull chopped cilantro
- 1 Teaspoon Ghee
Method
Instant Pot
- 1)
Add the rice and dhal, water and salt in the instant pot and let it cook with closed pressure valve for 9 minutes
- 2)
Let the pressure release by itself. Do not force it out
- 3)
Once the pressure releases, open the instant pot and mix the rice and lentils
Seasoning the Khichdi
- 1)
Add the Ghee and the ‘for tempering’ ingredients
- 2)
When the cumin seeds get aromatic pour the flavored ghee in cooked rice and dhal and mix nicely
- 3)
Garnish with Ghee and cilantro
- 4)
Enjoy when its hot
