A simple healthy meal, that can be made from left over bread. This can be made very quickly, and is a great snack for kids. This can also be a lunchbox recipe.
Ingredients
- 2-3 Cups Bread, Cut in small pieces
- 3 Cups Water
- 1/4 Teaspoon Turmeric Powder
- A pinch of red chilli powder (Optional)
- 1/2 Red Onions, Finely chopped
- 1 Tomato, Chopped
- 2 Tablespoons Water
- Salt to taste
For Flavor Infusion (tempering)
- 1 Tablespoon Ghee
- 1/2 Teaspoon Mustard Seeds
- 1/2 Teaspoon Asafoetida
- 1 Teaspoon Urad Dal
- 2 to 4 Curry Leaves
- 2 to 3 Green Chilles, Depending on desired spice level
- 1/2 Inch Piece Ginger, Finely Chopped
- 1 Tablespoon Roasted Peanuts
Garnish
- A handful of cilantro, Finely Chopped
Method
- 1)
Keep all ingredients ready.
- 2)
Heat ghee in a non-stick/ ceramic saucepan and add the tempering ingredients.

Sauté until the urad dal becomes golden brown and the mustard seeds start spluttering.
- 4)
Add the peanuts.
- 5)
Add onions and sauté until it is golden brown.
- 6)
Add the chopped tomato 2 tablespoons water, red chilli powder and salt.
- 7)
Once the tomato cooks and the water evaporates (5 min) add the bread.
- 8)
Cover it and let it cook for about a minute. Make sure it does not stick to the bottom of the pan.

Garnish with cilantro.

Bread upma is ready to be served.
