Mixed Vegetable Kootu

A quick healthy recipe that can be had with Indian Bread (Chappati), wheat tortillas or with rice. This is a traditional South Indian recipe made with mixed veggies and lentils. I used frozen veggies and Masoor Dhal, you can use fresh veggies and Toor dhal as well. It cooks quickly and kids love it.

Mixed Vegetable Kootu

    • Serves: 4 People

    Ingredients

    For Rice Cooker

    • 1 Cup Masoor dhal
    • 1/2 Teaspoon Turmeric powder
    • 1 Cup Frozen mixed veggies
    • 2 1/2 Cups Water
    • Salt to taste
    • 1 1/2 Cups Water, For the rice cooker

    To Grind

    • 1 Teaspoon Cooking oil
    • 3 Tablespoons Grated coconut
    • 3/4 Teaspoon Cumin seeds
    • 1 Teaspoon Urad dhal
    • 1 Teaspoon Chana dal
    • 1/4 Teaspoon Black peppercorns
    • 3 Dried red chillies
    • 10 Curry leaves
    • 4 to 5 Tablespoons Water

    For Flavoring

    • 2 Teaspoons Ghee
    • 1 Teaspoon Mustard seeds
    • 1/4 Teaspoon Asafetida
    • 1/2 Teaspoon Cumin seeds
    • 1 Teaspoon Urad dhal
    • 4 to 5 Curry leaves

    Method

    • 1)

      Pour 1 1/2 cups of water in the rice cooker.

    • 2)

      Take the “For rice cooker ingredients” in a stainless steel bowl and place it inside the rice cooker and cook it on white rice mode.

    • 3)

      Saute the “To Grind” ingredients in the hot oil until the dhal is golden brown and then grind to a smooth paste. Add water based on consistency of the mixture.

    • 4)

      Keep the ground mixture aside.

    • 5)

      Heat the “For flavoring ingredients” in a cooking pot.

    • 6)

      Once the mustard seeds splutter, add 2 teaspoons of water ( to slightly cool off the pot).

    • 7)

      Add the cooked dhal and veggies and the ground paste and give it all a nice mix.

    • 8)

      Add salt to taste and let it cook for about 5 minutes.

    • 9)

      Kootu is ready to be served with Rice or Chappatis.

    Tip

    I love the smell and taste when I use coconut oil for this recipe.
